Apple Butter Muffins

INGREDIENTS 3/4 cup whole wheat flour 3/4 cup all-purpose flour 3 tablespoons sugar, divided 1 tablespoon baking powder 1/4 teaspoon salt 1 cup Kellogg's® All-Bran® Original cereal 1/2 cup skim milk 2 egg whites 3 tablespoons vegetable oil 1 jar (11 oz.) apple butter 1/4 teaspoon cinnamon 1 sliced, small, unpeeled apple, cut into wedges

    Stir together flours, 2 tablespoons of the sugar, baking powder and salt. Set aside.

    In large mixing bowl, combine KELLOGG'S ALL-BRAN cereal and milk. Let stand about 2 minutes or until cereal softens. Add egg whites and oil. Beat well. Stir in apple butter. Add flour mixture, stirring only until combined. Portion batter evenly into twelve 2 1/2-inch muffin-pan cups coated with cooking spray. Stir together remaining 1 tablespoon sugar and cinnamon. Sprinkle on top of muffin batter. Top with apple wedges.

    Bake at 400°F about 25 minutes or until lightly browned. Serve warm.
